Healthy Quiche Lorraine

A delicious, classical, french dish
Ingredients
  • 6 eggs
  • 3 tablespoons of all-purpose flour
  • 20 cl crème fraîche
  • 400g of bacon strips ( or smoked ham strips)
  • 100g of shredded cheese ( swiss works like a charm)
Instructions
  1. whisk one egg and add the flour slowly, proceed the same adding all the other eggs one by one
  2. beat the mixture as if you would make an omelette
  3. In a skillet, cook the bacon strips (or smoked ham strips) until nicely brown
  4. Add the crème fraiche in the mixture and mix well
  5. Add salt and pepper (be generous with the pepper), finally add the cooked bacon and the shredded cheese
  6. Cook for 30 min at 200°c ( 390° F)
  7. Serve warm with a salad on the side, or cut in squares and serve it as an appetizer, enjoy!
Notes
- If you want to make it gluten free, you can use a gluten-free flour that contains xanthan gum

- After hours of looking for a way to replace crème fraiche with a US equivalent I would recommend a mix of light and heavy cream. But, it is best to use french crème fraiche if you can find it in a specialty store
